Here's an instant sauce for tom yam. Replace meat with tofu, tempeh, seitan, mushroom or any vegan meat of your choice to veganise.
Ingredients: Shallot, Lemongrass, Chilli, Asam (Tamarind) Sauce, Lemon Juice, Sugar, Salt and Palm Oil.
Stir-fry a packet of Instant Tom Yam Sauce until it's fragrant. Add 700ml (3.5 cups) water, tomatoes, vegetables, chilli padi and 250g of vegan protein like tofu and mushroom, stir over medium heat until it boils and add lime juice to taste. Garnish with peppermint leaves if you want.
