Creamy Shiitake & Porcini Risotto with Pumpkin

Enjoy the rich, earthy flavours of shiitake and porcini mushrooms in a creamy Italian-style risotto, balanced by the natural sweetness of pumpkin and the freshness of basil. Made with real vegetables, herbs and rice, this wholesome one-pan meal delivers authentic risotto flavour with simple ingredients and no unnecessary additives.

How to Enjoy

  1. Heat 2 tablespoons of olive oil in a saucepan and stir in the contents of the tray for 1 minute.
  2. Add 7 g of salt (or to taste). For extra depth of flavour, you may also add 50 ml of white wine and allow it to evaporate.
  3. Gradually add about 750 ml of hot water while stirring continuously until the risotto becomes creamy and reaches an al dente texture, about 25 minutes over medium heat.
  4. Remove from the heat and stir through vegan Parmesan (like Verdanya's vegan parmesan powder) or a splash of plant-based cooking cream or coconut milk if desired.

For one serving: Use approximately 95 g of the risotto mix with 300 ml of water. Remember to shake the tray before cooking to evenly distribute the ingredients.

Serving Suggestions

  • Garnish with crispy vegan ham and fresh basil for an extra layer of flavour and texture.
  • Pair with a crisp green salad or roasted vegetables for a complete meal.
  • Finish with freshly cracked black pepper and a drizzle of extra virgin olive oil before serving.

Allergens: May contain traces of sesame, mustard, hazelnuts, celery and peanuts.

Storage: Store in a cool, dry place. Once opened, consume before the best before date.
