For Mayo Dipping Sauce
Directions
Drain the banana blossoms and rinse 2-3 times in clean water.
Cut the banana blossoms into small pieces.
Place banana blossoms in food processor or grinder and grind until slightly flaky. Don’t let it be totally ground into a paste. Try to get it flaky.
Now add coriander leaves, spring onion, onion, red chilli, red chilli powder, pepper powder, vegetable stock powder, black salt, baking powder, all-purpose flour, corn flour and 1 tbsp sunflower oil.
Mix well to get a nice thick mixture. If mixture is watery, more flour may be added.
Allow the mixture to rest for 20-30 minutes to allow all the flavours to be absorbed.
Shape the mixture as preferred and roll them in bread crumbs until well-coated.
Then heat up a little oil and fry the fritters at medium high heat until brown on both sides.
Place the fried fritters on kitchen towels to drain any excess oil.
Serve fritters with mayo dipping sauce.
For dipping sauce, just mix all the ingredients together and it is ready.
