How to Enjoy
- Easy Omelette/Wrap/Thosai
Mix 1/3 cup omelette mix with 1/3 cup water. Let sit for 5 minutes, then stir again to remove lumps. Pour into a lightly oiled pan over medium-high heat and cook until the surface is mostly dry before flipping. Cook the other side until lightly browned.
Spread thinly for wraps, tortillas, roti, or thosai-style crepes, or leave slightly thicker for simple omelettes.
Blend 1/2 cup (50g) of mix with 300g silken tofu using a blender or stick/immersion blender. Cook as you would an omelette for a softer, fluffier texture similar to traditional egg omelettes.
For scramble-style eggs, break up the cooked omelette into chunks after cooking both sides.
Mix 1/4 cup mix with 1/2 cup non-dairy milk. Optional: add cinnamon and sugar for a sweeter version. Let sit for 5 minutes and stir again to remove lumps.
Dip bread into the mixture and pan-fry both sides over medium heat until golden brown.
Serve sweet with fruit and syrup, or savoury with curry, chutney, or spiced vegetables.
Add herbs, spices, mushrooms, spinach, onions, vegan cheese, chopped vegetables or vegan bacon pieces to customise your omelettes and scrambles.
Serve as a hearty breakfast with toast and sautéed vegetables, enjoy as a side dish with rice, curry, rasam, sothi, and stir-fried vegetables, or prepare sweet French toast topped with fruit and syrup.
Use the mixture for quiche, frittata, savoury muffins (bake in a greased muffin tray/holder at 180 degrees Celsius until firm and lightly browned), wraps, or protein-packed brunch dishes.
